This huge cheese is traditionally made in the fruitieres, a kind of cooperative that transforms milk from small farmers which sole production would not suffice ( It takes 500 liters to make the one cheese! ) and then redistribute to these farmers the proceeds of the cheese making. This system is centuries old and it certainly is responsible for the good environmental health of the pastures grazed by the cows used to make your Comté cheese.
