Can smell ever so slightly caramely and taste nutty, meaty, not too salty with tyrosine crystals. (4)
It retains its typical creamy, nutty, floral, sweet backbone yet it is deeper ever so slightly saltier and the first few tyrosine crystals do betray its age!
The rind is without interest though one may notice a darkening of the pate under this rind, this part is quite sought after for its sometimes toffee caramely flavour.
Enjoy with a bold red wine.
